1 firm tomato, finely chopped
1 red pepper, chopped
1 red onion, chopped
Pinch of salt
Small bunch of cilantro leaves
2 mangoes, peeled, pitted and sliced

Mix all ingredients together for a salsa-like salad. For variation add peaches.
