 Almond Cookies
- 4 cups all-purpose flour
- 2 cups sugar
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 1/2 cups shortening
- 1 egg
- 3 tablespoons water
- 1/2 cup chopped almonds, blanched
- 1 teaspoon almond extract
- 1/2 cup whole almonds, blanched
Sift and measure flour; sift again with sugar, baking powder and salt. Cut in shortening as for pie dough.
Beat egg and water, using electric mixer. Add egg, extract and chopped almonds to dry ingredients. Shape into small balls. Flatten each to 1/4-inch thickness and 2 inches in diameter. Press almond into center of each. Place on an ungreased baking sheet. Bake in a 350-degree preheated oven for 10 to 15 minutes. Yields approximately 5 1/2 dozen.
