 Nutty Salad
This is a kind of "toss it together," but we have included some estimates of the quantities we used.
- 6 cups mixed greens (we used a mixture of spring mix and red and green leaf lettuces for texture)
- 1/2 onion, thinly sliced (we used a red onion for color, but we've also made it with a Vidalia onion)
- 1/2 red pepper, thinly sliced
- 3 tablespoons pepitas (hulled pumpkin seeds)
- 3 tablespoons pine nuts
- 1 ounce crumbled blue cheese
- Balsamic vinegar
- Olive oil
Wash and dry greens. Place in bowl, and add remaining ingredients. Drizzle with balsamic vinegar to taste. (We also added just enough olive oil to keep it from being too tart.) Toss.
Makes 2 to 3 servings.
Note: Pepitas are extremely salty, so taste salad before adding salt.
