Pumpkin Cookies
Lucky customers at Ferri's Fine Foods got these for Halloween.
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup shortening
1 cup sugar
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 cup pumpkin
1 egg
1 teaspoon vanilla Orange Butter Icing (recipe follows)
Combine cinnamon, salt, shortening and sugar. Add flour, baking powder and soda. Add pumpkin, egg and vanilla. Stir well. (Dough was soft, but didn't spread much.) Drop by teaspoon on lightly greased sheet. Bake at 350 degrees for 10 to 12 minutes. Frost warm. Makes about 6 dozen.
